Breakfast Sandwich Casserole


Moving to the East Coast a decade ago introduced me to so many new things, including the B.E.C. lifestyle. If you don't know, that's Bacon Egg and Cheese, and yes - it IS a lifestyle. I love this breakfast dish because it is a combination of all the goodness of a bacon, egg, and cheese breakfast sandwich in the form of a casserole. You can make it ahead the night before, and it freezes beautifully. I hope you enjoy this one as much as we do.

INGREDIENTS

1 roll Pillsbury Crescent Rolls

4 eggs

1/2 c milk

8 slices bacon

1/2 sweet onion

1/2 c shredded cheddar cheese

salt, pepper, onion powder

DIRECTIONS

  • Preheat oven to 375

  • Grease an 8x8 baking dish

  • Open, separate and roll up crescent rolls per directions

  • Lay rolls inside your baking dish (it's ok if sides are touching)

  • Chop and cook bacon, set aside

  • Pour out half of bacon grease

  • In remaining grease, sauté diced sweet onion

  • In small mixing bowl, combine eggs, milk, and spices - whisk together

  • Add bacon, onion and cheese to the egg mixture

  • Pour egg mixture over crescent rolls

  • Bake 35-40 minutes, or until eggs are done

  • Enjoy!
