Breakfast Sandwich Casserole
Moving to the East Coast a decade ago introduced me to so many new things, including the B.E.C. lifestyle. If you don't know, that's Bacon Egg and Cheese, and yes - it IS a lifestyle. I love this breakfast dish because it is a combination of all the goodness of a bacon, egg, and cheese breakfast sandwich in the form of a casserole. You can make it ahead the night before, and it freezes beautifully. I hope you enjoy this one as much as we do.

INGREDIENTS
1 roll Pillsbury Crescent Rolls
4 eggs
1/2 c milk
8 slices bacon
1/2 sweet onion
1/2 c shredded cheddar cheese
salt, pepper, onion powder
DIRECTIONS
Preheat oven to 375
Grease an 8x8 baking dish
Open, separate and roll up crescent rolls per directions
Lay rolls inside your baking dish (it's ok if sides are touching)
Chop and cook bacon, set aside
Pour out half of bacon grease
In remaining grease, sauté diced sweet onion
In small mixing bowl, combine eggs, milk, and spices - whisk together
Add bacon, onion and cheese to the egg mixture
Pour egg mixture over crescent rolls
Bake 35-40 minutes, or until eggs are done
