Parmesan Crusted Baked Halibut


I love cooking Valentine's Day dinner for my husband instead of going out to eat; we get more time together, get to customize our own menu, and - if I do it right - there's leftovers the next day. This year, I made this delicious dish that had us both going back for seconds (and thirds). I love this recipe because it's simple and made from few ingredients, cooks fast, and you can easily adapt it for any white fish (cod, tilapia, sole).

INGREDIENTS

4 halibut fillets

3/4 cup Italian breadcrumbs

1/2 cup grated parmesan cheese

4 tbs cream cheese

1 lemon, juiced and zested

2 tbs olive oil

Spices:

garlic salt

fresh cracked pepper

parsley (fresh if you have it, but dried works well too!)

DIRECTIONS

  • Pre-heat oven to 400 degrees

  • Line you baking sheet with parchment paper and lay out fish, patting dry with paper towels

  • Salt the fish

  • In a small mixing bowl, combine spices, cheese, lemon zest and breadcrumbs

  • Gently spread cream cheese over each piece of fish

  • Top with cheese and breadcrumb mixture

  • Bake 10-15 minutes or until fish is flaky and opaque in the center

  • Drizzle fish with light lemon juice and serve
