TINY Kitchen Breakfast Avocados


You all already know that I absolutely LOVE brunch. It's my favorite part of every weekend. Today I'm sharing an awesome brunch main dish - my very own TINY Kitchen Breakfast Avocados. They are - quite literally - loaded up with some of the best parts of every breakfast: (turkey) bacon and eggs. And because of all of the healthy protein, and the perfect fats found in avocado, this is one brunch dish that will keep you full until dinner time.

INGREDIENTS

1 whole Hass Avocado per person

2 small - medium eggs per person

1 strip of Turkey bacon per person

salt and pepper to taste

DIRECTIONS

  • Pre-heat oven to 425

  • Slice your avocados in half and remove pits

  • With a spoon, gently carve out a slightly bigger hole than the pit left

  • Place avocados on a lined baking sheet, flesh side up

  • Gently crack an egg into the center of each avocado

  • TIP: it's totally ok if a little spills out. If a lot spills, carve out a little more space with your spoon

  • Dice up your bacon into bits, and sprinkle on the top of the egg

  • Place in oven, and cook for 20 minutes

  • Sprinkle with salt and pepper to taste

  • PLUS UP: add a dash of hot sauce if you like it spicy!
