TINY Kitchen Simple Summer Salad

The final long weekend of Summer is here! I hope you have made time to soak in the sun and enjoy the last minutes of this amazing season with your friends and family.

Part of our Labor Day traditional always involves amazing home-based meals, BBQs and cocktails with friends. Because I treasure that time with my people, I always look for simple, quick and healthy recipes that I can whip up in a beat, and that will make people smile. This is one of those. This salad is loaded with fresh summer flavor, and ready in minutes!

INGREDIENTS

2 cucumbers

1/2 pint grape tomatoes

1 cup cubed mozzarella

1/2 cup fresh basil

1/2 tbs olive oil

1 tsp balsamic

1/2 tsp dill

1/2 tsp parsley

1/2 tsp chili flakes

sea salt and fresh ground pepper to taste

DIRECTIONS

  • Peel and slice your cucumber, and slice grape tomatoes

  • In a large mixing bowl, combine your cucumber, tomatoes and basil

  • NOTE: basil can be left as whole leaves, or sliced into thin strips - totally up to you!

  • Dress veggies with olive oil and a drizzle of balsamic

  • Sprinkle mixture with spices

  • Add your mozzarella cubes, and toss all ingredients to combine

  • Serve and share immediately
