TINY KITCHEN QUICK PESTO CHICKEN


I *heart* pesto so much, you guys. This delish dish combines all the amazingness of pesto, with the creaminess of cheese, and the fuel-you-up magic of lean chicken in one. Pair this main dish with your favorite roasted veggie, and voila -- dinner is served.

The recipe below is made up of goodies from our last Trader Joe's run, but you can easily find these ingredients at most grocery stores. We really love Trader Joe's chicken breast tenderloins for so many reasons, including the fact that you don't have to defrost those puppies since they cook perfect from frozen every time, saving you lots of prep time. This yummy meal is sure to become a new household favorite once you get a taste AND discover that it's less than 5 minutes of prep (for reals) and all done within 30 minutes. Yep, a delicious meal delivered to the table in under 30 minutes; what could be better? How about a delicious meal on the table in under 30 minutes and for only 350 calories a serving? DING, DING, DING.

INGREDIENTS

1/2 cup steamed white rice

6 Trader Joe's boneless skinless chicken breast tenderloins

1/4 cup Trader Joe's Pesto alla Genovese (basil pesto)

1/4 cup low fat shredded mozzarella

pinch of garlic salt

dash of fresh ground black pepper

DIRECTIONS

  • Pre-heat oven to 350 degrees

  • Line a rimmed baking sheet with foil

  • Place chicken on baking sheet and lightly season your chicken with garlic salt and pepper (yes, even if it's frozen)

  • Using a spoon or small spatula, evenly distribute the pesto across the chicken

  • Sprinkle with cheese

  • Place in oven and bake for 25 minutes (or until chicken juices run clear when pierced with a fork)

  • Optional: broil for an additional 2-3 minutes until cheese lightly browns and bubbles

  • Divide rice across both plates, then place equal parts chicken on top of rice on both
