TINY KITCHEN BBQ CHICKEN PIZZA


I don't know about you guys, but I have a deep and intense love affair with pizza. It might be my second favorite food, just behind tacos. Like most of you, I surely don't think of pizza as a healthy meal BUT (yes, BUT), it absolutely can be a reasonable meal choice when you chef one up at home. It may not be as delightfully greasy and ooey-gooey as your favorite local takeout spot, but homemade pizza is simple and tasty, not to mention fun to make -- just put those kiddos to work loading up pizza toppings while you pour the rosé. See? FUN.

This recipe is my favorite homemade pizza; it's so stinkin' flavor packed you won't believe it AND it's only 366 calories for two slices. YEAH, BOYYYYYY. You read that right. Two tasty slices for under 400 calories! WOOT WOOT! As a reminder, all February long we are sharing our favorite recipes that clock in at under 400 calories a serving and this one might just be my favorite yet.

INGREDIENTS

1 Boboli Thin Crust

3 Trader Joe's Chicken Breast Tenders, boiled and shredded

3/4 cup Colby + Monterey Jack shredded cheese

1/4 cup red bell pepper, diced

2 tbs minced red onion

1/4 cup chopped fresh basil

1 tsp olive oil

3 tbs honey BBQ sauce

dash garlic salt and pepper

DIRECTIONS

  • Pre-heat your oven to 450

  • Lightly drizzle olive oil on your crust, using a spoon or spatula to spread evenly coat pizza crust

  • Next, drizzle 1 tbs of the BBQ sauce over crust and also spread evenly

  • Sprinkle 1/4 cup of your shredded cheese across crust

  • Next, sprinkle your onions, bell pepper, and basil across the top

  • In a small mixing bowl, combine your shredded chicken and the remaining BBQ sauce. Add garlic salt and pepper

  • Stir chicken until evenly coated with BBQ sauce

  • Pour chicken onto pizza from bowl, using a spatula to evenly distribute across pizza

  • Top pizza with remaining cheese

  • Place pizza onto a large insulated cookie sheet or pizza baking stone

  • Cook 8-10 minutes or until cheese is melted and bubbly

  • Let sit for 3 minutes before slicing into 8 slices

  • Serving size = 2 slices
