TINY Kitchen Bacon-Wrapped Chicken Breasts with Asparagus

Hello friends!

This is a simple and super yummy recipe for anyone who loves them some bacon. It takes just minutes to throw together, and pop in the oven - giving you time to enjoy a summer cocktail on the porch. Another reason I love it is that it's super versatile! You can swap out the asparagus for peppers, tomatoes, broccoli, spinach or any of your favorite veggies making this dish a guaranteed repeat in any kitchen.

Let's dive in!

INGREDIENTS

one chicken breast per person

4-6 strips of organic, thick cut bacon per person

one stalk of asparagus, ends trimmed

olive oil

salt, pepper

optional: cheese

RECIPE

  • Preheat oven to 350

  • Par cook your chicken breasts, then very carefully slice them in half, leaving them connected on one side so they open like a book

  • Lightly oil, salt and pepper the inside of the breast

  • Place 3-4 stalks of asparagus on one side of the chicken

  • Optional: add a slice of your favorite cheese over the asparagus

  • For this, I love a creamy white cheese

  • Now fold the chicken over so the breast is closed

  • Lightly oil, salt and pepper the outside

  • Now, wrap the breast with 4-6 slices of bacon

  • Place each wrapped breast onto a lightly oiled baking sheet

  • Cook for 25 minutes

  • In the meantime, toss the rest of your asparagus with olive oil, salt and pepper

  • At the 25 minute mark, add your remaining asparagus to the pan with the chicken to roast

  • Cook an additional 15 minutes or until the bacon is full colored and the veggies are done

  • Enjoy!
