TINY Kitchen Shrimp and Andouille Sausage with Zoodles


If you haven't yet tried zoodles (i.e. the delicious noodle created from a fall favorite: zucchini), this is a great first timer recipe. It's so flavorful, you'll forget the meal is made up of nearly all vegetables. I love this recipe for fall because as the temperature drops this time of year, it seems almost instinctual to reach for the carbs, the cheese, the salt. It's our inner cavemen and women wanting to fatten us up for the long winter ahead. Using zoodles as a healthy pasta alternative, you'll keep yourself from total carbo-overload. Zucchinis contain only about 6g carbs each compared to a whopping average of 43g carbohydrates for a single serving of pasta. Yep,.. let that sink in a bit. INGREDIENTS

2 tbs coconut oil or olive oil

2 small zucchinis, tops cut off

16 large, deveined and de-shelled cooked shrimp

1/2 a 12oz package of al fresco brand Smoked Andouille Chicken Sausage

1/2 a red bell pepper, sliced into 1 inch long thin strips

2 slices of large red onion, diced

1/2 tbs fresh basil

2 tsp himalayan sea salt

2 tbs shredded parmesan cheese

pepper to taste

DIRECTIONS

  • In a medium sauce pan, heat 1 tbs oil over medium-high heat

  • Once oil is warm, add your chopped onion and cook until aromatic

  • Add your sliced red bell pepper, and saute veggies

  • Add shrimp and sausage and heat through, turning often

  • Aprinkle mixture with fresh basil, 1 tsp sea salt and light pepper

  • Turn heat to low and allow to simmer

  • Next, using your spiralizer of choice to turn your zucchini into zoodles!

  • In a large pan, add your remaining tbs of oil and heat until oil is hot

  • Using tongs, gently add your zoodles to the hot oil

  • Sprinkle with 1 tsp sea salt, and turn zoodles frequently using tongs

  • Cook zoodles for 3-5 minutes (careful not to overcook!)

  • Using your tongs, distribute the zoodles onto plates

  • Next using a slotted spoon, spoon the shrimp, sausage and veggie mixture over the zoodles

  • Sprinkle with fresh cracked black pepper and light parmesan cheese

  • Enjoy!
