TINY Kitchen Shrimp and Andouille Sausage with Zoodles
If you haven't yet tried zoodles (i.e. the delicious noodle created from a fall favorite: zucchini), this is a great first timer recipe. It's so flavorful, you'll forget the meal is made up of nearly all vegetables. I love this recipe for fall because as the temperature drops this time of year, it seems almost instinctual to reach for the carbs, the cheese, the salt. It's our inner cavemen and women wanting to fatten us up for the long winter ahead. Using zoodles as a healthy pasta alternative, you'll keep yourself from total carbo-overload. Zucchinis contain only about 6g carbs each compared to a whopping average of 43g carbohydrates for a single serving of pasta. Yep,.. let that sink in a bit. In addition to saving your carbs intake, this recipe is so satisfying, flavorful and simple to make, I guarantee you will love it. Give it a try and let me know what you think!
