TINY Kitchen Summery Shrimp Skewers


Looking to add something new to your regular grill rotation? These shrimp skewers cook in just minutes, are super tasty, and both low in calorie and high in nutrition. Pair them with our favorite salsa-rice (recipe below), for a simple and savory summer dinner.

INGREDIENTS

16 bamboo skewers or reusable metal skewers (this recipe serves 4, we recommended 3-4 skewers per person)

1 lb large shrimp, peeled and deveined

1 large green bell pepper

1 large red yellow, or orange red bell pepper

½ large white onion

¼ fresh pineapple, cut into chunks

2 tbs coconut oil

1 tbs fresh cilantro

½ lemon

1 tsp cumin

1 tsp garlic salt

1 tsp cracked black pepper

dash cayenne pepper

DIRECTIONS

  • If you are using wooden skewers, soak them in water for 30 minutes

  • Wash all of your veggies, and then slice them into strips or squares

  • Place your onions and peppers in a large mixing bowl – leaving pineapple to the side - and add the coconut oil, cilantro, juice from your half lemon, and dried spices

  • Add in shrimp, and using a large mixing spoon, turn to evenly coat everything with oil and spices

  • Next layer your skewer with alternating pieces of onion, pepper, shrimp and pineapple until they’re gorgeously stacked

  • PRO TIP: Keep 1 inch free at the top of the skewer so nothing falls into your grill when you cook

  • Spray your grill with coconut or olive oil spray to prevent sticking

  • Pre-heat your grill on high, then lower the temperature to medium–low

  • Place skewers across grill and let cook 10 min on one side (or until shrimp is opaque), then carefully flip each skewer and cook another 4-5 until the shrimp are completely done. Be careful not to overcook!

While your skewers are cooking up on the grill, prep this easy rice recipe!

INGREDIENTS

2 cup white minute rice or brown rice

2 cups water

1 tsp cumin

1 tsp garlic salt

1 tsp cracked black pepper

1 cup pico de gallo or mango salsa

DIRECTIONS

  • Prep rice according to directions

  • Add spices and salsa

  • Stir to combine

  • Place a small serving of rice in the center of each plate, and gently press down to flatten it

  • Top the rice on each plate with 4 skewers

  • Enjoy!
