TINY Kitchen Stuffed Steak Pinwheels


This delicious recipe requires only a few ingredients and is super easy and quick to make, but sure to impress. Rich steak paired with homemade herb butter will knock 'em dead, so save this recipe for your next important occasion like a date, anniversary dinner, or the in laws coming over. Or a Wednesday when you're home alone,... because you deserve it (and a glass of wine).

The recipe below is for oven baked pinwheels, but you can just as easily throw these on the grill and they'll turn out great - just use skewers to hold the pinwheel together while it cooks.

I also recommend pairing these pinwheels with a side of green veggies like green beans, asparagus or broccoli. Set aside one tablespoon of the herb butter and saute your veggies while the steak cooks for a delicious meal.

INGREDIENTS

1 large flank steak

1 stick butter

¼ cup loosely packed fresh thyme

¼ cup loosely packed rosemary

¼ cup loosely packed oregano

2 cups fresh spinach

salt and pepper

DIRECTIONS

  • Pre-heat oven to 400 degrees

  • Prep the herbed butter:

  • Place a stick of butter (at room temperature) and hour fresh herbs into a food processor and lightly pulse until ingredients are combined and smooth

  • On a large cutting board, carefully butterfly your steak - cutting with the grain - so that the back edge stays in tact by about 1/4 “ and the meat opens like a book

  • Flatten your steak, and season with salt and pepper

  • Spread a healthy layer of the herbed butter across the steak (TIP: set aside one tablespoon to sauté asparagus, green beans or broccoli in for a yummy side)

  • Layer your spinach across the steak

  • Roll the steak up, starting at the bottom and rolling up and away from you and rest on cutting board seam-side down

  • Tie your roll closed with kitchen twine – once on each end, and one or two times in the middle, depending on how long your steak roll is

  • Next, with a very sharp knife, cut individual slices 1-2" thick off of the roll (TIP: if the roll is falling apart, side a wooden skewer through the length of each slice, holding each layer in place)

  • Place pinwheels on lined baking sheet, and sprinkle each with salt and pepper

  • Bake in oven for 25-30 min, and let sit for 5 minutes

  • While the pinwheels sit, use kitchen shears to snip the twine and pull off of each pinwheel before serving
