TINY Kitchen Creamy Greek Shrimp


Sometimes, ok - a lot of the time - I come up with the best recipes on total accident. This is one of those. I wish I could say this was inspired by a trip to Greece, or some great family recipe, but no. It was inspired by leftovers and desperation. It's that real, folks.

I was tired and super-hungry after a long day of work. You know: the kind of hungry when you're so famished that nothing in particular sounds good, because you want to devour anything and everything? Yep, that was me.

The fridge was fairly empty, but this carton of leftover rice from the weekend take-out kept catching my eye.

"What can I do with leftover rice?"

I had some shrimp, some veggies, and I was just about to uncork some wine. So, why not combine them? About halfway through cooking this meal, I had the idea to add some tahini and feta to the mix, and BOY-OH-BOY, was that the best move ever. This shrimp and veggie sautee became a rich, creamy and tasty dish that had me going back for seconds. Between the fiance and I, there were zero leftovers and two plates licked clean.

INGREDIENTS

1-2 tablespoons coconut oil

2 cloves of garlic, minced

4 green onions, diced

1 pint cherry tomatoes, halved

2 cups raw spinach

1 cup garbanzo beans, rinsed

1/3 cup dry white wine

3 ounces of crumbled Feta Cheese (I use low fat feta, you can use whatever you like!)

8 ounces Tahihi Sauce (we love Trader Joe's)

1 pound uncooked medium shrimp, peeled, deveined

1 teaspoon dried oregano

Salt and pepper to taste

2 cups cooked rice (brown or white)

DIRECTIONS

  • Heat oil in a large pan over medium-high heat

  • Once oil is hot, add garlic and onions, sauteeing until aromatic

  • Add shrimp, then add wine, oregano, salt and pepper

  • Cook for 1-2 minutes, then add in spinach, tomatoes, and garbanzo beans

  • Sautee all ingredients together over medium heat for 3-5 minutes or shrimp is cooked through and opaque

  • Lower heat and add feta and tahini sauce, stirring until mixture becomes creamy

  • Add cooked rice to mixture in pan, and stir until all ingredients are combined and most of the liquid has been absorbed (should be creamy, not soupy)

  • Now's the time to taste test (the best part, let's be honest): add more salt, pepper or oregano to taste

  • Serve hot and enjoy!
