TINY Kitchen New Year's Resolution Cookies


So, it's January and there's a good chance you're on a diet. But hey, no one said getting healthy meant losing the ability to treat yourself every once in awhile. Here is a recipe that will do just that: satisfy your sweet tooth without loading up on refined sugar, flour and tons of butter.

In fact, these cookies are white sugar and flour-free, and made with literally no dairy. And no, they do not taste like cardboard. In fact, they are super yummy and loaded with chocolate chips and nuts which means just one cookie will be enough to satisfy your craving.

INGREDIENTS

1 cup almond flour (I love Bob's Red Mill)

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 cup light brown sugar

1/3 cup coconut oil

1/3 cup vanilla almond milk (I'm sure plain almond milk or coconut milk would also work)

1 teaspoon vanilla extract

1tsp cinnamon

1 ripe banana, diced

3/4 cup old-fashioned rolled oats

1 cup Ghiradelli semisweet chocolate chips (they are dairy free!)

1/3 cup chopped pecans

DIRECTIONS

  • Preheat over to 350 degrees

  • Grease a baking sheet and set aside (note: insulated baking sheets work best!)

  • In a large bowl combine sugar, flour, baking soda, baking powder, cinnamon and salt

  • Add coconut oil, almond milk and vanilla

  • Mix all ingredients together until well combined

  • Mix in banana (this acts as a bonding agent, taking the place of eggs)

  • Add in oats, chocolate chips and nuts

  • Mix all ingredients together

  • Hand roll into 1-in balls, placing onto baking sheet

  • Bake 20 - 25 minutes

  • Immediately move to cool on wire rack
