TINY Kitchen One Pot Pasta


One of my favorite memories from the past year was my birthday. Not only was it the day that I got engaged to the love of my life, but we had an incredible weekend celebrating both my 35th year and our engagement with our closest friends and family.

As part of that celebration, we hosted a fete at our house and I had planned to whip up some super easy bites to keep everyone smiling. As part of that, I was going to throw together a One Pot Pasta, or as I have called it many times: "the easiest pasta ever."

Cue laughter.

See, I threw everything together in the pot, set it on the stove and then made a big to-do to my friends about how easy this was, and that they were just going to love it. Then I walked away. Fast forward.... smoke detectors going off, a kitchen that smelled like campfire, and two terrified friends running to find me to warn me about something burning up on the stove. The culprit? The easiest pasta ever.

See, this really IS the easiest and yummiest way to make pasta, but when the cook is so excited about her birthday and engagement (and champagne) that she mistakenly throws the ONE ingredient into the pot that was meant to be added at the end - the CHEESE - this one pot pasta became a one pot disaster. And quite a funny story.

My kitchen may have smelled like burning parmesan for the rest of the weekend, but that didn't slow down the celebrations! Nor has it detered me from continuing to make this dish time and time again.

I hope you enjoy it as much as we do! Perfect for a quick meal on a cold day.

INGREDIENTS

1 pound dry spaghetti

1 large onion, diced

1 cup grape tomatoes, halved

2 cups fresh basil leaves

4 cloves garlic, minced

12oz keilbasa, sliced

Salt and freshly ground black pepper, to taste

1 cup grated parmesan

ALT: Use spinach in place of basil, and chicken in place of keilbasa for a different, yet equally yummy, version!

DIRECTIONS

  • Add 32oz water to a large pot (that's just over 4 cups)

  • Turn the burner onto medium high heat and add your spaghetti, keilbasa, onion, tomatoes, basil, and garlic

  • Bring to a boil; reduce heat and simmer uncovered for about 10 minutes, or until pasta is cooked and liquid has reduced

  • NOW: stir in the parmesan. :)

  • Add salt and pepper to taste

  • Remove from heat and serve
