TINY Kitchen Buffalo Chicken Lettuce Wraps
I love anything buffalo. In fact, my third date with my future husband involved 99 cent buffalo wings at a dive bar in New York City, and I firmly believe it was our shared love of buffalo sauce that sealed the deal many years ago.
Today I am sharing one of my favorite quick meals: Buffalo Chicken Lettuce Wraps. It's all the goodness of buffalo chicken, with a healthy twist making this delicious dish under 200 calories per serving. You can turn the heat up or down depending on your palate by controlling how much buffalo sauce you use. We love our spice, so I go a little heavy on the sauce. You'll want to taste-test as you go (oh, you poor thing) to make sure that this mixture is perfect for you and yours.

INGREDIENTS
3 boneless skinless chicken breasts
1/4 cup chopped or shredded carrots
1tbs diced red onion
1-2 tbs Frank's Buffalo Sauce, to taste
1 tbs blue cheese salad dressing
garlic salt, fresh ground black pepper to taste
1 tsp onion powder
butter leaf lettuce (3-4 large leaves per person)
DIRECTIONS
Boil chicken breasts, set aside to cool (note: it's easier to hand-shred chicken when it's still a little warm, so cool for just a few minutes)
Once chicken has cooled a bit, shred
In a large mixing bowl combine shredded chicken, onion and carrots
Add in buffalo sauce, mix together
Add in salad dressing and spices, mix together
Spoon 2-3 tbs of filling onto each large butter leaf
