TINY Kitchen Pulled Pork Sandwiches & Apple Bacon Coleslaw


One of my favorite things to do on a cold winter weekend is breakout the slow cooker. I love being able to throw a bunch of things in there and then walk away, enjoying a house that smells like dinner for the rest of the day. Yes, I'm weird. But I know I'm not alone.

For the rest of your slow cooker fiends out there, here is an awesome recipe that is a total crowd pleaser: this pulled pork is super easy, which makes it a great option for busy weekends, parties, and football Sundays. It makes heavenly sandwiches when placed on rolls, but you can also eat it alone or over rice and veggies for a healthier take.

Additionally, this recipe just does not get made in The TINY Kitchen without it's ultimate companion: Apple Bacon Coleslaw. The two are so good together, we've been known to put some of that coleslaw on top of the pork creating the ultimate sandwich. One tip on the coleslaw: make it the night before so it can set up. It always tastes way better on day 2.

Perfect Pulled Pork

INGREDIENTS

1 pork shoulder

1 yellow onion, sliced

1 tbs minced garlic

3/4 cup Sweet Baby Ray's BBQ Sauce (or your BBQ sauce of choice)

1 can Dr. Pepper (or my favorite, Pepsi)

1 tsp cayenne

2 tsp cumin

salt, garlic powder, and black pepper

DIRECTIONS

  • Place onion and garlic in bottom of slow cooker

  • Give the outside of the pork shoulder a good rub with salt, pepper and garlic powder

  • Place inside slow cooker

  • Pour Dr. Pepper over the pork shoulder

  • Cook on high 4-5 hours (you can also cook on low for 8)

  • Carefully remove meat from slow cooker and shred

  • Place back in slow cooker, and add your BBQ sauce, mixing well

  • Add your cayenne and cumin, mix again

  • Cook an additional 45 minutes

Awesome Apple Bacon Coleslaw

INGREDIENTS

1 medium cabbage, cored and shredded (Quick Tip: buy 2 bags of pre-shredded cabbage)

4 firm granny smith apples, peeled and shredded

6 green onions, diced

1/2 pack turkey bacon, fried and crumbled (you can use regular bacon, too!)

1/4 cup apple cider vinegar

1/2 cup mayonnaise

1/2 cup plain greek yogurt

1/3 cup honey

juice from one lemon

salt and pepper to taste

DIRECTIONS

  • Add all ingredients to large mixing bowl

  • Mix together

  • Taste test: add more salt and pepper to taste

  • Refrigerate overnight

  • Enjoy alone or atop your pulled pork sandwich
