TINY Kitchen Poached Eggs with Quinoa
Looking for an easy, hearty and healthy breakfast option? This one hits the spot. It's simple, quick and delicious.
You can season up the quinoa however you like: adding some different veggies and spices for flavor. The quinoa and eggs are designed to keep you full and energized with their protein and fiber, but if you're looking for something with a little more sustenance, I recommend placing this on top of breakfast potatoes, hashbrowns or my favorite: a black bean burger patty. Trust me, it's delish!

INGREDIENTS
4 eggs (or two per person)
2 cups cooked mixed red and white quinoa (organic preferred)
1 tbs olive oil
1 tsp white vinegar
1 cup raw spinach
1/2 cup grape tomatoes, halved
1/4 cup feta cheese (optional)
1/2 tbs minced garlic
salt and pepper to taste
DIRECTIONS
In a small pan, heat 1 tbs olive oil
Add the veggies for your quinoa to the pan: I love spinach, tomato and minced garlic but peppers, squash, onions and more would be great in here!
Sautee your veggies in the oil until softened and the garlic is aromatic
Turn the heat to low, add your pre-cooked quinoa to the pan and mix together
Add salt and pepper to taste
While that cooks together over low heat, prep your poached eggs:
In a large pan, add about 2-3 inches of water and bring to a steady simmer - not a full boil
Add a small dash of vinegar to the simmering water, but no salt!
Crack fresh eggs individually into a ramekin or cup. TIP: the fresher the egg, the easier it is to poach.
Slowly tip the egg into the water, white first and let cook three minutes for a still soft yolk, four for fully cooked yolk
Remove each egg with a slotted spoon and place eggs onto a paper towel to remove excess water
OPTIONAL: While the eggs drain on the paper towel, add your feta to the quinoa and veggie mixture and give it a good stir
Place your cooked quinoa and veggies onto a plate (or atop potatoes or a blackbean burger as I've done here), and then add your freshly poached eggs, and salt and pepper to taste (also great with a dash of hot sauce or Sriracha)
