TINY Kitchen Magic Mongolian Beef Made Healthy!
One of my favorite things is figuring out healthy-hacks for some of my most-craved meals.
You know the sort - the kind of meal that elicits actual drool from your salivary glands before your first bite.
The kind of food that literally makes you sigh with happiness, and maybe - just maybe - do a little wiggle dance in your chair after your first taste.
Yep, that kinda meal.
Enter Mongolian Beef. Oh, so good, but healthy? Not so much.
Determined to find a way to make this at home without extra oil or anything fried, I experiemented in The TINY Kitchen for months until I finally came up with this version and can I just say that it's pretty effin great? Yes, it's different than what you get in a restaurant, but it is packed with just as much flavor and a lot less of the bad stuff. And it is SUPER easy and quick. Perfect for those nights you want a hearty and delicious meal STAT.

INGREDIENTS
1lb. lean ground beef (has to be lean or it will turn out too greasy)
1/2 c. brown sugar
1/4 c. low sodium soy sauce
1 tbs sesame oil
3 cloves garlic, minced
1/2 tsp fresh ginger, minced
1 tsp Sriracha (aka, heaven sauce)
Salt & pepper
1 bunch green onions, chopped
ALT: add extra veggies -- diced green bell pepper or broccoli florets
DIRECTIONS
Heat large skillet over medium heat, brown hamburger with garlic in sesame oil
Drain most of the fat out and return to burner
Add brown sugar, soy sauce, ginger, salt & pepper and Sriracha, simmer for a few minutes to combine flavors
Serve over brown rice and top with green onions
