TINY Kitchen White Bean and Tomato Salad


There's nothing like an actual "side dish" to make me feel like a grown-up. Yes, I realize I'm in my mid-thirties and yes, I realize side dishes are, arguably, the easiest part of a meal. But, let's be honest -- most of the time I'm so excited/focused on the main dish, that the last thing I think of is what's going alongside it. Unless it's Taco Night... I pretty much own Taco Night and all it's glorious sides (most of which you'll find here on the blog!).

A fresh alternative to salad, this is a very simple, healthy and yummy go-to. Enjoy!

INGREDIENTS

1 pint grape tomatoes

1 can organic Great Northern beans, drained

1 1/2 tbs red wine vinegar

1/2 tsp sea salt

1/2 tsp black pepper

olive oil to taste

optional: dill

DIRECTIONS

  • Cut the tomatoes in half or into thirds depending on size

  • Combine your cut tomatoes in a small mixing bowl with the great northern beans

  • Add red wine vinegar

  • Add salt and pepper

  • Mix together, then add a dash of olive oil and mix again

  • Up your salt and pepper to taste

  • Add dill if desired

  • Serve room temp or chilled
